Super chocolaty, wonderfully creamy, sublimely sweet, and wearing a crunchy mint exoskeleton, these may be good for you but they taste like they shouldn’t be. Really, these are a decadent indulgence that… isn’t an indulgence at all. It’s sweetened with dates, not refined sugar, cashews add a healthy source of fat and are responsible for the creamy texture, and just a spoonful of cocoa powder finishes the batter. Three ingredients is all it takes for such a scrumptious batter. Roll that batter into balls and roll in crushed candy canes for a crunchy peppermint-y, not to mention festive, outer layer.
Soak the dates in hot water for 10 minutes. Place the dates, cashews, and cocoa powder in a food processor and process until combined. Place the candy canes in a small plastic bag and crush.
Roll the dough into 1 inch balls and then roll the ball in the candy cane to coat. If you want to be extra healthy, you can substitute the candy canes with a splash of peppermint extract.
