Chocolate Peanut Butter Energy Balls

These taste like a granola-y chocolate chip cookie; but with dark chocolate chips, so that makes it instantly more interesting. I find them very similar to the seed cookie recipe that my Vermont relatives invented to fuel and sustain them while they were running marathons. Flax seed, chia seeds, oats, and dark chocolate chips are all ingredients the two recipes have in common. But this recipe has the advantage is a scoop of protein powder, a helping of peanut butter, a seasoning of cinnamon. Plus, the other recipe required additional seeds and they all needed to be toasted on a baking sheet before assembly could even begin- this recipe is so much easier to make! Combine everything in the food processor, fold in the chocolate chips, and eat. These bites will definitely assist your daily endurance, but a single batch might not endure very long, so best buy the ingredients in bulk.

 2 cups Old fashioned oats
 ½ cup Flaxseed, ground
 1 tbsp Chia seeds
 1 tsp Cinnamon
 ¾ cup Dates, pitted
 ½ cup Peanut butter
 1 tsp Vanilla
 1 scoop Vanilla whey protein powder
 ¼ cup Water
  cup Dark chocolate chips

Add all the ingredients together except the water and dark chocolate chips in a food processor. Pulse until the ingredients are blended and oats are finely chopped, almost like flour consistency. Slowly add water to the food processor and blend until the mixture sticks together.

You may need to add more or less water, depending on your dough. Add mixture to a large bowl and fold in the chocolate chips. Roll the dough into balls and either serve immediately or store in an airtight container in the refrigerator.
