Chocolate Covered Cookie Dough Brownie Bombs

Units Scale

Cookie Bomb Ingredients:

  • Edible Chocolate Chip Cookie Dough
  • 1 box Fudgy Brownie Mix

Chocolate Coating:

  • 2 cups Chocolate Chips
  • 1 tsp Coconut Oil

Cookie Bomb Assembly:

  1. Prepare and bake the brownie mix according to the directions on the back of box. Allow brownies to cool completely.
  2. Roll 1 teaspoon of the chocolate chip cookie dough into a small, spherical ball. Set on a cookie sheet and repeat rolling the cookie dough into balls until you’re happy with the number of treats you have.
  3. Place the cookie sheet in the freezer until the cookie dough is frozen stiff.
  4. Cut a 1×1 inch square of brownie from the center of the brownie. (I found that edge pieces did not work the best for this recipe.) Flatten the brownie and wrap it around one of the cookie dough balls. Repeat this step for all remaining cookie dough balls.
  5. Place the brownie spheres back on the cookie sheet and return it to the freezer to harden.

Chocolate Coating:

  1. Combine the chocolate chips and coconut oil together in a microwave safe bowl. Microwave in 30 second intervals, stirring in between, until fully melted.
  2. Remove one of the brownie bombs from the freezer and set in the melted chocolate. Using a fork, roll the ball around until it’s fully coated. Then scoop up the ball and carefully tap your fork against the side of the bowl to remove the excess chocolate. (You can also drag the fork tines across the lip of the bowl if your ball is still dripping chocolate everywhere.)
  3. Set on a wire rack or parchment paper and allow chocolate to fully set before serving.
