Celebratory Sugar Cookie Sandwiches

With sprinkles inside the batter, these cookies are festive before you even frost them. Then you do and wish you hadn’t eaten so many before you got to the frosting part. You should probably make some more, so you don’t eat all that extra frosting with a spoon. Or do, we won’t tell. 🙂

Sugar Cookies
 ½ cup Unsalted Butter
 ¾ cup Sugar
 1 tsp Vanilla
 1 Egg
 1 ⅔ cups Flour
 ½ tsp Cream of Tartar
 ½ tsp Baking Powder
 ½ cup Sprinkles
 1 pinch Salt
Marshmallow Fluff Buttercream
 ½ cup Unsalted Butter
 2 ½ cups Confectionery Sugar
 1 cup Marshmallow Fluff
 2 tbsp Heavy Whipping Cream

Beat together butter, sugar, and vanilla until light and creamy; about 5 minutes. Add egg and mix. In a separate bowl, combine flour, salt, cream of tartar, and baking powder then add to wet ingredients. Gently fold in sprinkles.

Using a small ice cream scoop, spoon out dough and roll into balls. Chill dough in fridge for up to an hour. Bake at 338 degrees for 8-10 minutes. Allow to cool slightly on tray before turning onto a cooling rack to cool completely.

Marshmallow Fluff Buttercream

Cream butter until light. Add confectionery sugar and beat until combined. Add heavy whipping cream marshmallow fluff and beat until fluffy, about 5 minutes.

Pipe frosting onto center of cookie and top with a second cookie, forming an irresistible sandwich.
