Carrot Cookies

Happy carrot day internet!

Question: Did you guys know about all of these different unofficial holidays? I had no idea there were so many- I’m running myself ragged trying to keep up with all of them! And this one gave me the perfect excuse to whip up a batch of these super tasty carrot cookies. They have a really well balanced flavor between the spices and the shredded carrots. They were so good, they almost didn’t need the cream cheese frosting. Almost.😊

 1 cup Butter
 1 cup Sugar
 ½ cup Brown sugar
 2 Eggs
 1 tsp Vanilla
 3 cups Flour
 2 ¼ tsp Cinnamon
 1 tsp Baking powder
 1 tsp Baking soda
 ½ tsp Salt
 2 cups Carrots, grated

Preheat the oven to 375 degrees.

Cream the butter and sugars together until light and fluffy. Beat in eggs and vanilla. Add the dry ingredients, mixing well. Fold in the carrots. Create individual balls of cookie batter on the cookie sheet and bake for 13-15 minutes or until the edges turn golden brown. Allow the cookies to cool and frost with a cream cheese frosting recipe. Garnish with chopped pecans, if desired.
