Candy Cane Dessert Bars

Nothing says the holidays like candy canes, but when your sweet tooth demands a slightly more complex dessert, this checks both boxes: festive and scrumptious!

Crust
 2 cups Chocolate wafer cookies, finely crushed
 ½ cup Butter, melted
 3 tbsp Sugar
Ganache
 1 cup Chocolate chips
  cup Heavy whipping cream
Filling
 1 cup Confectioners' sugar
 2 8 oz pkgs Cream cheese, soft
 2 tsp Peppermint extract
 1 ½ cups Heavy whipping cream
  cup Candy canes, coarsely crushed

Crust

Mix all ingredients together and press into the bottom of an ungreased 13 x 9 baking pan. Bake at 325 degrees for 10 minutes. Cool completely.

Ganache

Melt chips and cream in a saucepan over low heat. Stir smooth and pour over crust. Place in freezer for at least 10 minutes while making filling.

Filling

Combine sugar, cream cheese, and extract in a bowl. Beat at low speed until smooth and creamy. Fold in whipped cream and crushed candies. Spread evenly over crust. Sprinkle with additional crushed candy. Cover and freeze at least 4 hours or overnight.
