Blueberry Brownies

These were stunningly amazing. I never, ever would have thought to combine blueberries and chocolate, but I’m SO glad that someone did. Fudgy, chocolate brownies with fresh blueberries inside and out make for a surprisingly inspired combo.

 5 oz 70% Cocoa Chocolate (finely chopped)
 6 tbsp Unsalted Butter
 2 Eggs
 1 cup Sugar
 1 tsp Vanila
 ¾ cup Flour (+ 1 tbsp of flour)
 ½ tsp Salt
 1 ½ cups Fresh Blueberries

Preheat the oven to 400 degrees.

Line an 8 x 8 inch pan with parchment paper, allowing overhang. In a double boiler, combine and melt the chocolate and butter. Once smooth, remove from heat and set aside to cool.

Meanwhile, combine the eggs and sugar in a large bowl and beat with an electric mixer for 5 minutes. The mixture should be light and fluffy. Lower the speed and add the vanilla and slowly add the chocolate mixture; mixing until just combined and the batter is uniform in color. Sprinkle the flour and salt into the batter and gently fold in by hand, taking care to NOT over mix.

In a small bowl, toss the 1 cup of blueberries with the 1 tablespoon of flour to coat. Fold the blueberries into the batter and then pour the batter into the pan. Smooth the surface and bake for 30-40 minutes or until the brownies are slightly puffed but still moist in the center. Once removed from the oven, immediately but gently press the remaining 1/2 cup of blueberries on top of the brownies. Allow to cool completely before serving.
