Streusel Topped Blueberry Muffins
All you muffin fans out there, listen up! If you make this recipe, it will instantly become your new go-to blueberry muffin recipe!

Cinnamon and blueberries work in perfect harmony to create a muffin that is simply irresistable. Not only are these blueberry muffins moist and bursting with blueberry flavor- but they also have a streusel topping! Which only makes them that much more delectable!
Now, if you’re anything like my brother, blueberry muffins hold a special place in your heart.
Shaughn spent his childhood listening to endless refrains of “The Muffin Man” song because he so adored blueberry muffins. Which makes it nearly impossible to keep these muffins in the house!
As soon as I make a batch, my brother echolocates them; and the next thing I know, they’re half gone. And with this recipe, I can’t say that I blame him!

A Quick Word About Muffins…
As with any muffin recipe, be sure that you don’t overmix the batter. You do want to make sure that all the ingredients get mixed together. But leaving a few small lumps is better than overmixing your batter.
Muffins can be fussy and overmixing them makes for denser muffins that don’t rise as well in the oven. Which is not what you want.
So do your best to thread the line between “not mixed enough” and a batter that’s perfectly smooth batter and super overmixed.

Recipe
Preheat the oven to 400 degrees.
Combine flour, sugar, baking powder, and salt. Add the milk, egg, and oil; mix well, but do NOT over mix the batter. Fold in the blueberries. Fill muffin tins right to the top.
Combine all ingredients and cut the butter until pea sized. Sprinkle the topping over each individual muffin. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.

In Conclusion
These streusel topped blueberry muffins keep get eaten as quickly as I can make them! Because they really are that good! And I live with a blueberry muffin fiend. But mostly that first one.
