I hadn’t had a really good doughnut in years but these reminded me why I LOVE doughnuts. Light, fluffy pastries covered in cinnamon sugar, made all the healthier thanks to being oven baked and not fried in oil.

Beat together butter, oil, and sugars until smooth. Add eggs and beat to combine. Stir in the baking powder, baking soda, nutmeg, cinnamon, salt, and vanilla. Stir the flour into the butter mixture, alternating with the milk; beginning and ending with flour.
Spoon the batter into two greased doughnut pans, filling the wells 1/4 inch shy of the rim.
Bake at 425 degrees for 10 minutes. Remove from the oven and let cool 5-7 minutes before turning them out of the pans and onto a wire rack.
Cinnamon Sugar Option: In a plastic bag, shake warm doughnuts with about 1/4 - 1/3 c cinnamon sugar.
Powdered Sugar Option: In a plastic bag, shake warm doughnuts with 1/2 c of non-melting topping sugar, or confectionery sugar.
Frosted Option: Make or buy your favorite frosting recipe and spread on cooled doughnuts or make this glaze instead. Feel free to add sprinkles!
