Blueberry fritters are a dangerously delicious way to start your day. And the danger is only magnified by the miniature size- it’s insanely easy to keep popping them into your mouth until they’re just gone. These delightful donut bites get baked in a mini muffin pan until golden brown. Then, they’re brushed in a sugary sweet blueberry glaze and broiled until the glaze has caramelized. And then, for good measure, they get glazed again. While technically the recipe asks you to wait for the second glaze to finish setting before serving, I’d be shocked if you actually wait- I know I couldn’t.

Preheat the oven to 350 degrees.
In a large bowl, combine the dry ingredients. In a separate bowl, combine the butter, egg, vanilla, and yogurt; stirring well. Combine the wet ingredients with the flour mixture and stir well to combine. Fold in the blueberries.
Scoop the batter into a greased mini muffin pan, filling each well almost to the top. Bake for 15 minutes or until the tops turn light brown. Remove the fritters from the oven and turn the oven's broiler on high.
In a small bowl, whisk together the confectioners' sugar, milk, and blueberry jam until smooth. One at a time, dip the top of each fritter in the glaze and set on a baking sheet lined with parchment paper, allowing the glaze to drizzle down the sides. Place the fritters in the oven and broil until the tops start to crisp and caramelize; roughly 3-4 minutes.
Rotate the baking sheet every minute to keep the fritters broiling evenly and watch them carefully to keep them from burning. Once the fritters start to get brown spots, remove them from the oven.
Brush any remaining glaze over the fritters and allow the fresh glaze 15 minutes to set.
