Almond Pinecones

While they might look odd roasting over an open fire, these pine cones are hands down delicious. The cake beneath the almond exoskeleton is moist, fluffy, and perhaps best of all, smothered in a cream cheese frosting. Combined with the crunchy texture of the almond slices- it’s simply divine. Now, in the interest of full disclosure, arranging the almond slices was a tedious task. But what this dessert demands in time it more than makes up for it in flavor. Best of all, you don’t have to be a squirrel to enjoy this particular delicacy.

 1 ⅔ cups Flour
 1 ½ tsp Baking powder
 ½ tsp Salt
 ¼ tsp Cinnamon
 ½ cup Unsalted butter, soft
 ½ cup Sugar
 ½ cup Brown sugar
 3 Eggs
 1 ½ tsp Vanilla
  cup Buttermilk
 ¼ cup Heavy whipping cream

Almond Cakes

Preheat oven to 325 degrees.

Grease an egg pan and set aside. We used a 6 well silicone egg pan from Amazon that can handle baking in the oven. In a medium bowl, combine the dry ingredients; set aside. In a large bowl, cream the butter and sugars for 2 minutes, or until light and fluffy. Scrape the bottom and sides of the bowl, adding eggs one at a time.

Add the vanilla and mix until just combined. With the mixer on low, add half of the flour mixture. Beat until combined, add the buttermilk, beating until combined. Add remaining flour mixture, beating until combined. In a small bowl, beat the whipping cream until stiff peaks form. Fold in the whipped cream.

Divide the batter among the greased egg wells bake for 15-20 minutes or until the cakes bounce back when touched and a toothpick in the middle comes out clean. Let cool completely.

Cream Cheese Frosting

In a large bowl beat the cream cheese and butter together until smooth. Add the confectioners' sugar, cinnamon, salt. Beat on low until combined. Place the cakes on a serving plate and frost each cake. Arrange almond slices in overlapping rows to resemble pine cones, placing pieces with almond skin side out.
