5 Layer Cookie Brownie Cheesecake

This mind blowing dessert almost can’t be called a dessert at all. It needs a word that is bigger than “dessert” in order to capture the essence of what’s going on here. It’s a brownie, that has a hole in the center that gets filled with a layer of chocolate sandwich cookies. Which gets covered in cheesecake batter, that gets baked, cooled, and covered in a second layer of cookies, which gets covered by a single, giant chocolate chip cookie. It’s bonkers, and it’s also crazy impressive. Or maybe just crazy- that is, if you share my Grandma’s mindset. She lived her entire life believing that separate foods should never touch. So if you agree with Gloria, leave now. It only gets crazier from here.

 16 oz Chocolate chip cookie dough, room temperature
 2 18 oz boxes Brownie mix
 24 oz Cream cheese, soft
 ½ cup Sugar
 1 tsp Vanilla
 1 Egg
 25 Double stuffed chocolate sandwich cookies

Cut two long strips of plastic wrap and overlap them inside of a 10 inch spring form pan, letting excess wrap hang over the edge of the pan. Press the cookie dough into the bottom of the springform pan, creating an even layer that conforms perfectly to the 10 inch circle. Fold the edges of the plastic wrap over the center of the cookie dough and remove from the pan. Place the cookie dough on a baking sheet and set in the refrigerator.

Following the directions on the box, prepare both boxes of brownies. Grease the now-empty 10 inch pan and pour in all of the brownie batter.

Now, to create the well that the other ingredients fit into, take an 8 inch pan (this one CANNOT be a springform- the buckle on the side will leave an undesirable indent in the brownie) and spray the bottom and sides of the pan. Press the 8 inch pan into the center of the brownie batter. Set a heat proof bowl or pie weights in the center of the 8 inch pan to weigh it down and keep it in place. Bake the brownie for about 35 minutes, or until a toothpick comes out clean.

Remove from the oven and allow to cool slightly. While the brownies are still warm, carefully roatate and press down on the inner cake pan (using oven mitts) to push the cooked brownie even further up the sides of the pan. Allow to cool for 30 minutes.

Reduce the ovens temperature to 300 degrees.

In a large bowl, beat together the cream cheese, sugar, vanilla, and egg until the batter is smooth. Arrange a single layer of chocolate sandwich cookies on the bottom of the cooled brownie shell, setting the cookies as close together as possible. Pour the cheesecake batter on top of the cookies and level the top with a spatula.

Tap the pan against the table to release any large air bubbles, then bake for 40 minutes or until only the center of the cheesecake jiggles slightly. Remove from the oven and allow to cool. Once the pan is room temperature, freeze it until the top of the cheesecake is slightly firm; about 30 minutes.

Heat the oven to 350 degrees.

Arrange another layer of sandwich cookies on top of the cheesecake, then remove the circle of cookie dough from the fridge. Place the chocolate chip cookie dough on top of the exposed cookie layer and press any stray edges into the confines of the 10 inch pan. Bake for 20 minutes or until the top is golden brown.

Remove from the oven and allow to cool completely. Remove the sides of the springform pan, slice into your creation, and serve.
